Richard Stávek
Richard Stávek is one of the key names in Czech natural wine. He works in Němčičky in South Moravia, and his own winemaking goes back to the first half of the 1990s, although the winery was officially founded in 2008. This long history is important: his wines do not come from a short trend, but from years of steady work with local vineyards and the landscape.
For Stávek, wine is part of a wider farm, not a separate business on its own. Alongside the vines, he works with orchards, fields and pasture, and since 2009 his farming has been fully organic. He is also one of the early people connected with the Czech authentic wine movement, so his work helped form the natural wine scene in Moravia.
In the cellar, he prefers simple and traditional methods: whole bunch fermentation, foot treading, wooden vats, gravity bottling, and very little or no sulphur. Many of his wines come from older vineyards with mixed plantings, which is why field blends and skin-contact whites are an important part of his style. For the drinker, this often means wines that feel honest, personal, and closely tied to the place they come from.
