Jorge Olivera

Jorge Olivera works in Coscojuela de Sobrarbe, in the pre-Pyrenees of Huesca, a place where wine used to be part of everyday life but almost disappeared over time. His project grows from that local memory. Jorge started planting vines in 2009, made his first wine in 2011 for family use, and later built a small winery with the help of his father, José Mari, whose stories connect the project to the older wine culture of the village. Today, this link between past and present is still at the center of his work.

Before becoming a full-time grower, Jorge worked as a mechanical engineer. He eventually left that job to spend more time in the vineyard and cellar, and to follow a more personal idea of winemaking. He farms organically, uses biodynamic practices, works with manual harvests and keeps intervention low. His aim is not to make polished or technical wines, but honest ones, without defects, with freshness, balance and a clear sense of place.

An important part of his motivation is the recovery of local grapes, especially Moristel, which he sees as a key variety for the area because it gives lightness, acidity and drinkability. His wines show both freedom and care: they come from a young project, but one deeply rooted in the landscape, old village knowledge and the wish to bring wine back to a forgotten corner of Aragón.
