Entremón by Jorge Olivera is a Syrah-based red wine from the rugged Sobrarbe region in Aragón, Spain—a place where winemaking was nearly lost. The name "Entremón" comes from a dramatic local gorge visible from the vineyard. After fermentation with maceration, the wine aged for 14 months in oak barrels, gaining depth without losing freshness.
This wine reflects a revival of tradition: grown organically on mountain slopes by Jorge Olivera, a former mechanical engineer turned winemaker, who farms without added sulphites or filtration. Entremón is part of a small, hands-on project that honors the land’s history while offering a pure expression of Syrah.
