Domaine Nøvice

Domaine Nøvice is a small estate in Poligny, Jura, led by winemaker Yves Roy with his partner Christelle. Yves moved to the Jura in 2014, trained with Valentin Morel, and bought about 5 hectares of old Savagnin and Poulsard vines around the village. The name “Nøvice” reflects his choice to stay humble and keep learning. The couple began bottling under their own label in 2019 and continue to nurture young parcels of Chardonnay, Pinot Noir, and Trousseau for future releases.

Their approach is straightforward: healthy farming and gentle cellar work. The vineyards are worked organically (with biodynamic practices), some plots over a century old, and all fruit is harvested by hand. In the cellar they rely on native yeasts, avoid additives (no sulfur, no fining or filtration), and let fermentations happen in tank before a quiet year of rest prior to bottling. The aim is to show place rather than recipe. You’ll find light, drinkable reds from Poulsard and blends with Trousseau, and savory, mineral whites from Savagnin; they also sometimes direct-press Poulsard to make a pale, refreshing white.
