Le Pinot

Le Pinot from Domaine Nøvice is a red wine with a special story. In 2024, severe frost destroyed most of the estate’s own vines, so for this cuvée Yves turned to friends in Alsace. The Pinot Noir comes from the organically and biodynamically farmed Dietrich estate in Dambach-la-Ville, bringing clean, healthy fruit to the cellar in Poligny, Jura.
The grapes are 100% destemmed and aged in neutral fiberglass tanks, which means there is no oak influence and the wine can show a very pure expression of Pinot Noir. Expect a fresh, easy-drinking red with bright fruit, gentle tannins and a smooth texture, ideal for relaxed dinners, charcuterie, or a simple evening glass. Le Pinot offers a honest, unmasked taste of Pinot Noir, shaped by both Jura resilience and Alsatian vineyards.
