Waldo is a white wine from Collio in Friuli, made from Friulano, Malvasia and Ribolla grown in the warm Pradis hills near Cormons. The vines are very old, around 60 to 110 years, which helps give the wine depth and a strong sense of place.
The grapes are treated in a traditional, hands-on way: gently crushed, macerated on the skins for about ten days in concrete, then aged in oak barrels. This gives Waldo more texture than a classic white wine, with ripe fruit, candied citrus notes, a light tannic grip and a clear mineral line. A small part of the grapes was affected by noble rot, adding a special touch of richness. It is a good choice if you enjoy white wines with character, freshness and enough structure to pair with dishes such as fish soup, roasted vegetables or richer Italian cooking.
