WTB (“What the Bílovice”) is Milan Nestarec’s single-plot Grüner Veltliner from the Úlehle vineyard in Velké Bílovice. The vines were planted in 1974 on loess with a touch of limestone, giving the wine its salty, mineral edge and strong sense of place.
Grapes are farmed organically and picked by hand, then crushed by foot and left briefly on the skins before a long, gentle press. Fermentation happens spontaneously and the wine rests for years in a large old Stockinger oak cask on its lees, bottled unfiltered with just a tiny touch of sulfur.
In the glass, expect ripe peach and nectarine, honey blossom and savoury herbs, with a light oxidative note. The palate is textured and dry, with a hint of fine tannin, creamy layers and a long, stony finish. A thoughtful, characterful Grüner for people who enjoy whites that feel both comfortable and a bit wild at the same time.
