Enivrez-vous is a Jura white made entirely from Savagnin, from the “Sous la Roche” parcel in Poligny. The 40-year-old vines grow on very limestone-rich soils, which helps give the wine its firm, lively structure. After direct pressing, it spends three years ageing in barrel, shaping its oxidative style and adding extra depth.
This is a white with energy and character, showing the nutty, slightly savoury side that Savagnin can develop, together with bright acidity that keeps it focused. A good choice for drinkers who enjoy distinctive whites with tension, complexity and a long finish.
