Ancestral Mañana is a Palomino sparkling wine from Sanlúcar de Barrameda in Andalucía. It comes from old vines in La Charanga, with grapes picked early to keep freshness. The wine is made by the ancestral method: the juice starts fermenting in vat and finishes in the bottle, then rests for several months on its lees before disgorgement.
The result is a lively sparkling wine with citrus notes, a chalky touch and a salty sea-breeze feeling that reflects its coastal origin. A fresh and direct bottle, easy to enjoy and a good way to discover this style of Andalusian sparkling wine.
