Vinyes Singulars Malvasia de Sitges is a skin-contact white made from one of Catalonia’s rarer grapes. The fruit comes from the old Can Baltà vineyard, planted in 1959, giving the wine natural depth without needing heavy winemaking. It spends 8 days on the skins (“brisat”), which brings a light amber tone, a rounder mouthfeel, and a subtle tannic bite—more like a white with extra structure than a classic crisp style. Fermentation and ageing take place in a 500-litre chestnut barrel for 6 months, followed by a long rest in bottle. Serve slightly chilled and try it with grilled fish, roast chicken, mushrooms, or tapas with a bit of spice.
