L’Ecume is a refreshing sparkling wine from Burgundy, made by Julien Altaber of Sextant. This Pétillant Naturel (Pet Nat) blends Aligoté and Gamay, offering a light pink color and soft, generous bubbles. The Gamay brings fresh red fruit flavors and a pleasant crispness, while the Aligoté adds a silky texture and subtle notes of vanilla.
Made using the ancestral method, it undergoes fermentation with native yeasts and ages for six months on its fine lees, without added sulfites. Serve it chilled—it's a great match for a charcuterie board.
