Estático

Estático is a dry white wine that shows a different side of Pedro Ximénez. Made mostly from this local grape, with a small share of other native varieties, it comes from old bush vines in the Sierra de Montilla, rooted in albariza soils known for holding moisture and giving wines a marked mineral feel.

What makes this wine stand out is its ageing under flor for two years. This biological ageing brings depth, saltiness and a very distinctive sense of place. The fruit comes from the last days of harvest, adding a little more ripeness without losing freshness.

In the glass, Estático offers notes of ripe white fruit, citrus, chalk, white flowers and aniseed, with a light iodine touch. The palate is fresh, long and very mineral, with a sapid, saline finish that stays with you.
