YOLK

YOLK is a golden, skin-contact white that sits somewhere between classic white and light orange wine. It comes from the Stará vinice vineyard in Těšetice, in the Znojmo region of Moravia, where the vines are farmed organically. The cuvée combines Veltliner and Traminer: Veltliner bringing freshness and structure, Traminer adding perfume and character.
In the cellar, a stainless-steel tank was first half-filled with whole Traminer grapes and then topped up with freshly pressed Veltliner juice. The grapes and juice were left together for about ten months, so the wine could slowly take colour, texture and gentle tannin from the skins. YOLK is bottled without fining or filtration and with no added sulfur, so you get a very direct, unpolished expression of the grapes and place.
Expect a deep golden colour, a fuller mouthfeel and layers of fruit, spice and herbs. It’s a great choice if you are curious about orange-style wines but still want the drinkability of a white.
