Versante Nord Bianco is a volcanic white wine from the north face of Mount Etna, where vines grow between 550 and 900 metres above sea level on sandy soils rich in volcanic ash. The blend is led by the rare Sicilian grape Minnella, complemented by Catarratto, Grecanico, Inzolia and Carricante, coming from old vineyards that are more than 50 years old.
The grapes ferment naturally with native yeasts after a short maceration on the skins, then the wine matures for several months in cement and large old oak barrels. This approach preserves the depth and mineral character of the grapes while adding texture and balance.
The result is a white wine that expresses the cool northern slopes of Etna with citrus brightness, marked minerality and a saline finish. It is a clear reflection of its volcanic origin and of Eduardo Torres Acosta’s commitment to organic, hand-crafted winemaking.
