Orange Manuel Millenium is Yves Roy’s skin-contact expression of Savagnin from old vines in Poligny, Jura. The grapes, some from 120-year-old vineyards rooted in fossilised limestone, are worked with two different methods: half undergoes a three-week whole-bunch maceration, while the other half is directly pressed. This dual approach brings both aromatic intensity and freshness.
Fermentation takes place with native yeasts in large vats, followed by a year of ageing in 500-liter foudres. The wine is bottled without fining, filtration, or added sulphur, letting the terroir and grape speak clearly.
In the glass, it opens with vivid aromas of grapefruit, nectarine, and apricot. The palate combines ripe fruit with subtle herbaceous notes, gentle tannins, and a touch of bitterness from the skin contact. Salinity and minerality from the limestone soils shape the finish, giving it both depth and energy.
This orange wine pairs well with spiced dishes, aged Jura cheeses, or aromatic cuisine such as curry, where its structure and freshness meet the richness of the food.
