Som, Irrepetibles is a Catalan white wine from Penedès, made from equal parts Macabeu and Xarel·lo. The Macabeu comes from vines planted in 1968 on limestone slopes, while the Xarel·lo comes from old vines in Pacs del Penedès.
What makes this wine stand out is the way the two grapes are treated differently. The Macabeu spends six weeks on its skins, giving the wine extra texture and a gentle grip, while the Xarel·lo is pressed directly to keep a fresher, cleaner side. The wine is fermented in stainless steel and bottled unfined and unfiltered, so it keeps a direct, natural feel. Expect a fresh but textured white with a clear sense of place and a slightly wild character.
