This is our natural-bubbles selection for the festive season, spanning Italy, Slovenia, France and Spain. Tunia’s Sottofondo is a lightly veiled, amber-tinged Trebbiano with gentle fizz, bright acidity and a subtle, skin-contact bite. Klet Jankovič Pet Nat Red brings the rare thrill of sparkling red: dry, brut-nature pét-nat (Pinot Noir, Blaufränkisch, Merlot, Cabernet Sauvignon), bottled unfiltered for maximum character. From Penedès, Clos Lentiscus Gubi Gubi blends biodynamic Sumoll with Moscatel de Alejandría, made by the ancestral method and aged on lees for 8 months (no added sulfites).
Domaine Nøvice is bright and easy, with notes of apricot, apple and a grassy snap. Vinyes Singulars Minipuça (100% Xarel-lo from a 1957 vineyard) keeps things crisp and pure. And Celler els Mecanismes Xarnego adds a savoury twist: Palomino Fino + Macabeu, aged 12 months under flor in old Jerez barrels, then manually disgorged.
