This Pet Nat Red from Klet Jankovič is a rare style of sparkling red: dry, wild in spirit, yet made with a lot of care and patience. It’s a vintage 2017 brut nature, bottled undisgorged and unfiltered, with only a small touch of sulphur.
The wine is an equal blend of Pinot Noir, Blaufränkisch, Merlot and Cabernet Sauvignon. The grapes are hand-harvested from a southeast-facing slope of calcareous loam at around 300–330 metres, with very low yields of under one litre per vine. After a short skin maceration overnight and gentle pressing, the must is moved by gravity into oak barrels, where it ferments and rests for about 10 months.
Secondary fermentation happens in the bottle with a minimal addition of yeast. Because the cellar is not temperature-controlled, fermentation slows in winter and wakes up again in spring, sometimes lasting up to five years. The wine then ages on its lees for 60–120 months, giving deeper flavour and fine bubbles.
Serve well chilled (6–8 °C) and open very slowly, as this natural, undisgorged pét-nat can be lively in the glass.
