Kinki is a light, chillable red from a single old vineyard in Cobrana, in the cool, high part of Bierzo. The vines are 90–100 years old and mixed-planted, with mostly Mencía and a good portion of local white grapes like Doña Blanca, Godello and Palomino, plus a few rare red varieties. They grow on a striking mix of very degraded blue slate and red clay at 750 metres, giving the wine a clear, lively character.
The grapes are fermented as whole bunches, with red and white varieties co-fermented in the traditional local way. A long, gentle maceration keeps colour and tannin very soft while preserving lots of fruit. Ageing in large clay amphorae and old barrels keeps the wine pure, fresh and lightly textured.
In the glass, Kinki is pale and delicate, with aromas of red berries like currant, sour strawberry and raspberry, plus a subtle herbal, almost medicinal note and a touch of saltiness. It’s easy to drink, bright and energetic – especially good slightly chilled, with pizza, simple pastas or a table full of shared plates.
