KM7 Ancestral is a sparkling wine from Cómpeta, in the Axarquía area of Málaga. It comes from old vines planted on slate soils at 570 metres above sea level, a setting that helps give the wine freshness and a clear local character.
The blend brings together Moscatel, Montúa and Romé, three varieties with deep roots in southern Spain. The grapes are harvested early, pressed as whole clusters, and fermented in clay amphora. The wine is then bottled before fermentation is fully finished, following the ancestral method, and spends a long time resting on its lees.
The result is a natural sparkling wine with a Mediterranean profile: fresh, textured and expressive, with a strong link to its mountain vineyard and traditional way of making wine.
