0719 Ancestral is a sparkling wine from the mountains of Axarquía in Málaga, made from vines grown on black slate soils at 719 metres above sea level. It brings together four local grape varieties — Romé, Moscatel, Calona and Montúa — giving the wine a strong link to its place.
The grapes are pressed as whole bunches, then fermented in clay amphora. The wine is bottled before fermentation is fully finished, following the ancestral method, so the bubbles come naturally inside the bottle. After 18 months resting in bottle, it gains texture and depth while keeping a lively, fresh character. A mountain sparkling wine with a clear local identity.
