Pheasant's Tears Tsolikouri is a white wine from Georgia, made exclusively from the indigenous Tsolikouri grape. This grape variety thrives near the Black Sea in the humid climate of the Imereti region, known for its tea and citrus orchards. The local soils, rich in clay and limestone with naturally low acidity, provide the wine with a refreshing, bright character and noticeable minerality. The grapes undergo gentle pressing, and the wine ages first in stainless steel tanks for one year, followed by another year in bottles. Tsolikouri is known for its crisp acidity, balanced body, and slightly salty mineral notes, making it comparable to Chenin Blanc. Perfect for those looking to explore Georgian wines.
