Vesper is a white wine made from old Grüner Veltliner vines in the Stará hora vineyard, near Moravský Žižkov in Moravia. The site is windy, with sandy, well-drained soil, which keeps the grapes fresh and gives the wine a clear, lively line.
The vineyard also carries a small piece of local history: it once belonged to the parish, as people used to donate land to the church near the end of their lives. The name Vesper reflects this story, referring to the quiet prayer time between light and dark, while also giving a playful nod to Vesper Lynd from James Bond.
In the cellar, the wine is made with a gentle natural approach: whole bunches are pressed directly, fermentation starts with native yeasts, and the wine ages in a large oak foudre. It is bottled without fining or filtration. The result is a dry, precise and layered Veltliner with freshness, structure and a calm, confident character.
