Umami is Milan Nestarec’s take on Traminer as a food-loving white with real character. It comes from an amphitheatre-shaped vineyard on sand and clay, where grapes at the bottom ripen richer and those higher up stay fresher. This contrast shows in the glass as a mix of generous aroma and lively acidity.
The wine is made from Red Traminer and Gewürztraminer, crushed by foot and left a few days on the skins, giving extra texture and flavour. It ferments with native yeasts and ages quietly in a large old oak barrel, then is bottled unfiltered with only a tiny touch of sulfur, keeping it very close to the grape and place.
In the nose you’ll find lychee, rose petals, papaya and melon, lifted by citrus notes and a light salty edge; there can even be a gentle spritz at first sip. Umami shines with Asian-inspired dishes, aromatic spices and anything that plays with sweet–salty–spicy flavours.
