Barvířka is Milan Nestarec’s relaxed take on Dornfelder, a grape he once planned to remove from the vineyard. The vines were planted by his father and were in such good condition that Milan decided to work with them instead of replacing them. The wine is not only Dornfelder: it also includes Zweigelt and a secret mix of white grapes, giving it its own character.
It is made in a straightforward natural style, with spontaneous fermentation in open-top vats, free-run juice only, ageing in a large oak barrel, and no fining, filtration or added sulphur. Expect a dark-coloured red with low tannins and an easy, juicy feel. Serve it well chilled and keep it for relaxed food, friends, and simple pleasure.
