Ojo y Coíllo Riofrío Alto is a white wine that shows another side of Pedro Ximénez. Instead of sweetness, it offers a dry, textured and very local expression from the Sierra de Montilla. The grapes come mostly from old bush vines in Riofrío Alto, grown on chalky albariza soils that help the vines handle the area’s hot climate and also shape the wine’s salty, mineral feel.
Fermentation takes place in old fino casks, and the wine then rests on its lees under a veil of flor, a traditional ageing method in the region. This gives the wine extra depth without making it heavy. In the glass, you can expect notes of white flowers, citrus and yeast, with a chalky background. The palate feels fresh and broad, with clear salinity and a long, slightly bitter finish that makes it especially good at the table.
