Ojo y Coíllo Benavente Alto is a white wine that shows a different side of Pedro Ximénez. It comes from old bush vines planted in chalk-rich albariza soils, which help the vines cope with the dry conditions and give the wine a clear sense of place. Fermentation and ageing happen in old Fino casks, and the wine rests on its lees under a veil of flor until the next harvest.
This method gives the wine more than simple fruit. Alongside citrus and white flower notes, there is a gentle yeast character, a touch of toasted almond, and a chalky, salty finish. The palate is fresh, fluid and precise, with good texture and a light bitter note at the end that adds length and food-friendly character.
