Saint Laurent Carafa is a dry, light red made from the Saint Laurent grape (Svatovavřinecké) from the Stará vinice vineyard in Těšetice, in the Znojmo sub-region of Moravia. The vines are farmed organically and the wine is made in a very natural way, with minimal intervention.
Whole bunches are left to slowly ferment for about 10 days in wooden vats (a gentle semi-carbonic maceration), which brings out juicy fruit and soft tannins rather than heavy extraction. After pressing, the wine matures in a mix of French oak barrels and Moravian clay amphorae, adding subtle spice, roundness and a touch of earthiness.
It is bottled without fining, filtration or added sulfur, so you get a very pure taste of grape and place. Saint Laurent Carafa shows best after a bit of air, so decanting is recommended. A great choice if you enjoy fresh, characterful natural reds.
