21Setecientos is a young white wine that shows a very pure side of Zalema. It comes from old bush vines over 80 years old, which give the wine character and depth while keeping its fresh profile. The winemaking is simple and low-intervention: hand-harvested grapes, native yeast fermentation in stainless steel, and no ageing, fining or filtration.
In the glass, it is pale with light orange reflections. The nose brings notes of apple, stone fruit and a touch of anise. On the palate, it feels fresh and lively, with ripe fruit, a citrusy salty touch, and a long finish. A very easy wine to enjoy, especially with aperitifs, pickles, shellfish or simple seafood dishes.
