Metamorph is a characterful skin-contact white from Kéthely in the Balatonboglár region of Hungary. It blends mainly Welschriesling (75%) with Sauvignon Blanc (25%) grown on loess, loam and sandy soils, giving the wine freshness and lift.
The grapes are harvested by hand and fermented with wild yeasts. Welschriesling spends several days on the skins and partly as whole bunches in clay amphorae, while Sauvignon Blanc soaks on whole berries. Afterwards, the different parts rest on fine lees for about 10 months. The wine is bottled unfined and unfiltered with very low sulphur, and it is suitable for vegans.
In the glass you can expect a slightly hazy colour, gentle tannins and a dry, lively palate. Aromas lean towards apple peel, citrus, fresh herbs, cut grass and a touch of gooseberry. Metamorph opens up nicely with a bit of air and works well with flavourful dishes like grilled chicken, vegetable stews, curries or quesadillas.
