Arbois Trousseau Les Corvées is a single-vineyard red from one of the most respected slopes in Arbois. The hillside of Les Corvées is famous for its red marl soils and evening sun, which give Trousseau both ripeness and freshness.
Here, Domaine Ratte works with Trousseau à la Dame, an old local variety that produces very few grapes but with very concentrated aromas and tannins. The grapes are destemmed already in the vineyard, fermentation starts gently in the cellar, and the wine is then aged for a few months in stainless steel to keep the fruit pure while softening the tannins.
In the glass, expect a bright ruby colour, plenty of red fruit, a touch of spice and a hint of leather, carried by fine, well-shaped tannins. It’s a characterful Jura red that works especially well with good cuts of beef, game dishes or aged, flavourful cheeses.
