Savagnin ouillé La Pierre is a Jura white made from Savagnin grown on the La Pierre plot, set on iridescent marl soils near Pupillin. Unlike the more oxidative styles often linked with Savagnin, this wine is made “ouillé”, meaning the barrels are topped up during ageing to keep a fresher, more direct fruit profile.
The wine has notes of grapefruit zest, yellow fruit, almond, light smoke and gentle spice. A short skin contact before pressing adds texture, while long ageing in used barrels gives roundness without hiding the grape’s natural freshness. The finish is lively, with citrus and lime-like bitters that make it a good match for creamy poultry, fish in sauce, mushrooms or aged Jura cheeses.
