This Pet Nat from Penedès represents Clot de les Soleres' unique take on Cabernet Sauvignon sparkling wine. First introduced in 2017, it follows a meticulous production process. The grapes are hand-harvested and pressed whole without cooling, allowing for spontaneous fermentation. The wine then rests with lees for 13 months before disgorgement in October of the following year, creating a distinctive expression of this variety in sparkling form.
