This Bourgogne Aligoté is a strong example of how characterful Aligoté can be. It comes from Aligoté Doré vines planted on very rocky clay-limestone soils, on the site of an old Gallo-Roman villa below Comblanchien. That combination of place and grape gives the wine a clear mineral feel and a gentle salty edge.
In the cellar, the approach is simple and careful: direct pressing, spontaneous fermentation, and 12 months of ageing in neutral French oak barrels. The oak does not dominate, but helps give the wine more texture and depth.
The result is a white wine that feels precise, lively, and textural, with a stony, tonic style that works especially well at the table, particularly with seafood and shellfish.
