Chiassobuio is the first wine crafted by Tunia, named after the stream flowing beside their vineyards. It comes from old vineyards established in 1970, traditionally used for Chianti, and showcases a blend of Sangiovese, Colorino, and Canaiolo grapes—excluding the white Trebbiano that was once part of the classic recipe. This red is produced with an organic approach, using spontaneous fermentation with native yeasts before maturing half in steel and half in large oak vats for 36 months, followed by additional bottle aging.
In the glass, its garnet color reveals delicate tones typical of Sangiovese. You may pick up scents of dark berries, mushrooms, and a touch of leather or tobacco. Over time, light hints of chocolate emerge as well. On the palate, the initially bold tannins have softened, supported by a bright acidity that keeps the wine lively and easy to drink. Chiassobuio pairs especially well with grilled meats, hearty stews, and mature cheeses.
