Chiaroscuro is Tunia’s playful side: a lightly sparkling organic rosé made from 100% Cabernet Sauvignon grown on the limestone and clay hills north of the Val di Chiana in Tuscany. The grapes are harvested by hand and fermented spontaneously with native yeasts, without maceration, fining or filtration.
Part of the harvest is left to dry in the cellar until February; this sweet must is then used for the second fermentation in bottle, so the wine keeps its fine bubbles and natural sediment – a bit cloudy, almost like a craft beer.
In the glass it shows a deep pink colour and fresh aromas of cherry and apricot. On the palate it is lively and juicy, with a gentle mousse, soft fruit sweetness and bright acidity that quickly invites another sip. Serve well chilled as an aperitif, or pair it with vegetable starters, white meats or flavourful fish dishes.
