Ton Rimbau Spill is a natural white wine crafted from 100% Xarel-lo grapes grown in the Penedés region of Catalonia. This wine is special because it is made from grapes harvested at the very limit of ripeness from the border vines of the Porcellánic vineyards. These grapes undergo gentle cold pressing and spontaneous fermentation in stainless steel tanks, where the wine also matures for 12 months without added sulphites.
Spill stands out for its fresh yet complex character, showcasing ripe yellow stone fruit aromas blended with herbal and slightly savory notes. On the palate, it's energetic and refreshing, with lively acidity balancing the ripe fruit flavors and a distinct mineral undertone.
