This is a very characterful Tokaj white made from Furmint and Hárslevelű grown in a 40-year-old vineyard on pure volcanic rhyolite. The grapes are pressed in whole bunches, with a small part affected by noble rot (botrytis), adding extra depth and savoriness.
The wine is fermented and aged for two years in local Zemplén oak barrels under a layer of flor – a natural yeast veil also known from some sherries and Jura wines. This gives the wine its salty, nutty and slightly smoky personality.
In the glass you can expect notes of bruised apple, toasted hazelnut, chamomile, dried citrus peel and wild herbs. On the palate it is completely dry, with a firm, saline minerality and flavors of green walnut, dried apricot and lemon zest that stretch into a long, nutty finish.
Ötödik is a great choice if you enjoy complex, savory whites and want to discover a more adventurous side of Tokaj beyond its famous sweet wines.
