889+ Ancestral is a sparkling wine from high-altitude vineyards in Los Guájares, Granada, planted at 889 metres above sea level. It is made from Moscatel and Macabeo, two grapes that bring freshness, floral notes and Mediterranean character.
The wine is produced using the ancestral method: fermentation starts naturally and finishes in the bottle, creating its bubbles in a simple, traditional way. The grapes are pressed as whole bunches, then fermented in clay amphora and fiberglass tank before bottling. A long 65-month ageing on lees gives the wine more texture, depth and a gentle savoury side.
This is a sparkling wine with a strong sense of place: mountain-grown, patiently aged, and made with a low-intervention approach.
