1301 Ancestral is a sparkling wine from high vineyards in Cádiar, in the Alpujarra Granadina, grown at 1301 metres above sea level on slate soils. It is made from Vijariego Blanco, a grape closely linked to southern Spain and not often seen in sparkling wines.
The grapes are pressed as whole clusters, fermented in French oak barrels, and then bottled to finish fermentation in the ancestral method. A long time on the lees gives the wine extra depth and texture. In the glass, it leans toward an amber, savoury style, with notes of almonds, nuts, flowers, and a clear salty touch on the finish. A good choice for seafood, anchovies, aged cheeses, or simply for anyone curious about a different side of Andalusian sparkling wine.
