0889 Ánfora is a sparkling wine from Granada, made with Macabeo and Moscatel from vineyards set high above the Costa Tropical, at 889 metres. The vines grow on a mix of clay, limestone and slate, giving the wine a clear mountain character.
The grapes are pressed as whole bunches and fermented in clay amphora, a vessel that keeps the wine close to its fruit and texture without adding wood flavour. It is made by the ancestral method: the wine is bottled before fermentation is fully finished, creating its bubbles naturally inside the bottle.
What makes this wine especially distinctive is its long rest “en rima” for 65 months. This gives the sparkling wine more depth and a calmer, more developed profile while keeping the direct, handmade feeling of Samuel Párraga’s work.
