Pheasant's Tears Saperavi is a distinctive natural red wine crafted from Georgia's signature grape variety, Saperavi. Produced using ancient Georgian winemaking techniques, this wine undergoes fermentation and aging in traditional qvevri—large clay amphorae buried underground. Some of these qvevri vessels date back to the mid-19th century, maintaining ideal temperature conditions naturally.
Saperavi translates to "deeply colored," reflecting the wine's almost black, inky appearance. Grown on slopes overlooking the scenic Alazani Valley and Caucasus Mountains, the grapes benefit from unique limestone, chalk, and clay soils that impart rich flavors and robust tannins. On the palate, this wine reveals earthy notes combined with blackcurrant, fresh red fruits, and subtle hints of toasted almond. It's juicy yet structured, with gentle tannins providing a smooth drinking experience.
