Discover the authentic character of Georgian winemaking with Pheasant's Tears Mtsvane, a distinctive orange wine crafted from the rare endemic Mtsvane grape. Grown on the alluvial sandstone and quartz soils of Tibaani, Kakheti, this wine embodies Georgia’s ancient tradition, dating back 8,000 years. Using indigenous yeasts, the grapes undergo spontaneous fermentation followed by an extensive maceration period—up to 7 months—in traditional clay amphorae called qvevri, buried beneath the earth. This meticulous process continues with 10 additional months in qvevri, allowing the wine to naturally refine without filtration or clarification.
Pheasant's Tears Mtsvane boasts aromas of dehydrated fruits, smoky undertones, and delicate hints of withered flowers. On the palate, it offers a savory, mineral-rich profile that’s agile yet full-bodied, ending with a long and elegant finish. Ideal when paired with dishes like Vietnamese rolls, it promises a vibrant culinary experience, revealing the depth and unique flavors inherent to Georgia's esteemed wine heritage.
