G&T

G&T is one of Milan Nestarec’s cult whites – a single-vineyard field blend that really shows what Stará Hora can do. Riesling, Sauvignon Blanc and Pinot Blanc grow mixed together in this old organic plot on loess and sand, so they’re harvested and fermented as one, giving the wine a very natural balance.
The name comes from the first vintage, whose aroma reminded the team of gin and tonic with its juniper and gentle bitterness. You can still feel that vibe here: a dry, salty, mineral white with a touch of creaminess and shy oak. Expect lime and gooseberry notes lifted by a hint of vanilla, carried by firm, clean acidity.
The grapes were crushed by foot, spent a short time on the skins, and then fermented spontaneously before a long rest in a large used Stockinger oak barrel on the lees. Bottled unfiltered with only a tiny dose of sulfur, G&T is lively, structured and ready to drink now, but it also has the tension to age.
