El Emir is a naturally sweet wine made entirely from Pedro Ximénez grapes. The grapes come from old, goblet-trained vines rooted in albariza, a chalky soil that holds moisture and slowly gives it back to the plant. After picking, the bunches are laid out on racks in the sun and turned so they dry evenly. This traditional raisining process concentrates the juice and gives the wine its rich, sweet character.
In the glass it shows a light amber colour. The aromas bring to mind dates, dried apricots, figs, and a touch of citrus marmalade. On the palate, the sweetness is balanced by fresh acidity, with notes of raisins and honey. Serve it well chilled with blue cheese, nuts, fruit tart, crème brûlée, or simply as a small glass to enjoy after dinner.
