Oliver BIO is a light, natural white from the southern shores of Lake Balaton, made almost entirely from the aromatic Hungarian grape Irsai Oliver with a small touch of Zenit. The vines grow in sandy soils mixed with loess and loam, which hold water well and help keep the wine fresh and lively.
The grapes are picked in mid-August and start fermenting on their own yeasts, partly with whole bunches and some time on the skins. After gentle pressing, the wine rests on its fine lees for about eight months, then is bottled unfined and unfiltered with very little added sulphur.
In the glass, you can expect a clean, fruity style with notes of flowers, grape, and stone fruit, with a soft texture and bright acidity. It is an easy-going wine that works well lightly chilled on its own or alongside simple dishes like goat’s cheese, fresh salads, or light pasta.
