Malahierba Ancestral is a sparkling wine made exclusively from the Xarel·lo grape using an ancient winemaking technique called the ancestral method. This natural method involves bottling the wine before fermentation is complete, allowing it to finish fermenting naturally in the bottle, creating bubbles. It ages for around two years in underground cement eggs, enhancing its natural apple, citrus, and mineral flavors. Bottling and disgorging take place according to the phases of the moon—specifically, a descending moon—which follows traditional winemaking beliefs aimed at improving wine quality. Malahierba Ancestral may appear slightly cloudy, which reflects its natural and authentic production method without additives or filtering.
