This unique orange wine from Toledo combines tradition and natural winemaking methods. It's produced from rare pre-phylloxera Airén vines growing in sandy-limestone soils. The winemaker, Julian Ruiz Villanueva, applies minimal intervention techniques, allowing the wine to develop naturally during its extended 13-14 month maceration. The wine then ages for 6-7 months under flor yeast, similar to sherry production. This process creates a deep and complex wine that reflects both its terroir and the traditional winemaking methods of the region.
