Pregadéu Ancestral represents a historical approach to sparkling wine, using the ancestral method where fermentation completes in the bottle. The Xarel-lo grapes grow in unique east-facing vineyards with 18-million-year-old fossilized oyster soils in Penedès. Following natural winemaking principles, the wine ferments with indigenous yeasts and ages for 18 months on its lees. The result shows distinctive minerality and salinity with citrus and floral notes.
