Ja Ja from Domaine Nøvice is a very original take on Poulsard, the emblematic red grape of the Jura. Instead of being made as a red, the grapes are pressed directly, with only a very short maceration, resulting in a pale, delicate wine that sits somewhere between a white, rosé, and even an orange style.
The fruit comes from biodynamically farmed vineyards on limestone and marl soils around Poligny. Fermentation is spontaneous with indigenous yeasts, and the wine is bottled without fining, filtration, or added sulfur, keeping it as natural as possible.
In the glass, Ja Ja shows a light, orange-tinted colour with aromas of sour cherry, burnt orange, and a subtle herbal note. On the palate it is bright and floral, with citrus and gentle red fruit flavours carried by vibrant acidity and a touch of fine tannin.
This unusual expression of Poulsard highlights the creativity of Jura winemaking, offering freshness and purity in a style that challenges expectations of the grape. It pairs well with poultry, fish, or creamy dishes like blanquette de veau.
